Pivný štýl Gose je jediné pivo, ktorému bola ako lokálnej historickej špecialite udelená výnimka zo zákona o čistote piva (Reinheitsgebot), platného pre všetky ostatné nemecké pivá už od roku 1516. Jedná sa o spontánne kvasené pivo, ktoré využíva na kvasenie mikroflóru prítomnú voľne v prostredí, takže obsahuje okrem kvasiniek aj baktérie octového a mliečneho kvasenia. Gose je naviac varené slané, čo vychádza z pôvodného zloženia minerálnej vody z okolia mestečka Golslar, kde pivo vzniklo. Výslednú neobyčajnú slano-kyslú chuť vyvažuje čerstvo drvený koriander. My sme sa pokúsili osviežiť tento pivný štýl prídavkom čerstvých višní, tak, ako to robia výrobcovia belgických lambikov, flámskej paralely spontánne kvasených pív so suchou a kyslou chuťou. Kombinácia višní a tak kontroverzného piva ako je Gose, je prekvapivo príjemná a mimoriadne osviežujúca. Nehovoríme, že každému zachutí, ale určite by ho mal každý milovník piva ochutnať!

The Gose beer style is the only beer considered historically unique enough to be given the benefit of an exception from the Reinheitsgebot beer purity regulation law of 1516, which applies to all other German beers. It is a spontaneously fermented ale exploiting ubiquitous microflora for its fermentation and as an effect, apart from the yeast, it also contains fruit- and milk-fermenting bacteria. Moreover, Gose is brewed salty, a habit originating in the original composition of mineral waters in the vicinity of the German town of Goslar, the cradle of this beer. The resulting nonconformist sour-and-salty taste is balanced by ground coriander. We attempted to freshen up this beer style by adding fresh morello cherries, as is often done by the producers of Belgian lambics, a Flemish parallel to spontaneously fermented beers with dry and sour taste. The combination of the sour cherries with a beer as controversial as Gose is surprisingly pleasant and strikingly refreshing. We do not mean to claim it is everyone’s cup of tea, but it is definitely worth a try!
