Bière de Noël doslovne znamená Vianočné pivo a týmto názvom sa v Belgicku a okolitých krajinách označuje pivo varené na vianočnú sezónu, často ochutené koreninami typickými pre varené víno či štedrovečerné zákusky. Zatiaľ čo väčšina takýchto pív má mohutné sladové telo a štedrú porciu alkoholu, náš Bière de Noël je trošku iný. Vyššiu stupňovitosť samozrejme má, je však prekvasený do sucha a s perlivejším nasýtením a osviežujúcou kyselkavosťou sa priam poníma na snehovú polevu na medovníkoch. Toto sme dosiahli vďaka jedinečnému kmeňu belgických kvasiniek v kombinácii s citrusovou kôrou. K peci s medovníkmi a perníkmi Vás prenesie aj vôňa piva, pochádzajúca zo zmesi korenín ako škorica, muškátový oriešok, koriander, či vzácny aframóm. Takáto zmes, nazývaná aj gruit sa najmä v belgických pivách používala po stáročia pred objavením chmeľu. Natíska sa preto otázka, či naše pivo chutí po vianočnom pečive, alebo sa koláče pečú podľa stáročných receptov pív?

Bière de Noël literally means Christmas beer and thus this Belgian ale is often flavored with seasonal spices typical for Christmas patisserie and mulled wine. While most such beers have a massive malt body and high alcohol content, our Bière de Noël is a bit different. Obviously, it is rather strong, but its body is highly attenuated and carbonated and with a refreshing sour twist, it evokes gingerbread frosting. This is thanks to a unique strain of Belgian yeast combined with citrus peel. Freshly baked gingerbread is also present in the aroma originating in a mix of spices such as cinnamon, nutmeg, coriander and precious grains of paradise. Such mixture, also known as gruit, was used for centuries in Belgian beers before the appearance of hops. Therefore the question stands: does our beer taste after Christmas cookies, or the cookies are baked following centuries old beer recipes?
