The Gose beer style is the only beer considered unique enough to be given an exception from the Reinheitsgebot beer purity regulation law of 1516, which applies to all other German beers. Historically, Gose used to be spontaneously fermented but nowdays mixture of brewers yeast and special bacteria of the genus Lactobacillus, producing the desired acidic taste, is used. Moreover, Gose is brewed salty, a habit originating in the mineral composition of water in the German town of Goslar, the cradle of this beer. The resulting nonconformist sour-and-salty taste is balanced by ground coriander. We have underlined the sourness of this style with fresh lemongrass, which added a distinctive citrusy-herbal aroma and a delicate menthol flavor. The resulting beer is strikingly refreshing, and although it may not be everyone’s cup of tea, it is definitely worth a try!
